As far as moles, I haven't had a lot of experience with them. There may be a couple things that could help.
My dad used to use a thing that was installed above ground, and when the moles went through their tunnels, it triggered the mechanism and exterminated them. Some people may not like that, and in Florida, it may be easier to spot their tunnels, I just don't know. As far as safety, he had 2 cats which were indoor/outdoor, and they hunted a lot, but they never went near them. Of course, dogs are different and may go digging.
The other thing I've seen is a sonic mole deterrent. It puts some kind of audible pulse in the ground which I guess they don't like, and then they move on to different territory.
In any regard, I'd search the net for both products and reviews of effectiveness.
One last thing I'd suggest, move that compost pile.
And for the extreme, dig a trench around the garden and install some wire fencing below ground and bury it.
Best of luck with it...everyone should get their hands a little dirty. It just tastes better when you grow your own.
